I can’t stand the flavor of it, and don’t like any dressings or other foods that have been “tainted” with the taste! Najmieh Batmanglij uses a “National Deluxe” rice cooker but I can’t seem to find one, not even on line. He knows how to make tahdig the traditional way, but we are at a loss as to how to use this cooker, as it came with no instructions. These are my piddly tips on how to make tahdig (usually a thin layer) in a rice cooker from my college days. I bought a few bags of basmati rice from the supermarket, enough for four or five batches of polo and tadig.

Flip the saucepan, while holding the plate, and your rice should come out as a nice looking rice cake in the shape of your pan with crispy tahdig encasing it. Half way through cooking, about 30 minutes with my rice cooker, stir in the fava beans and continue the cycle.

Always use a soft sponge to wash it, never use a metal serving utensil, and line the bottom of the bowl with paper towels before storing it away. What’s great about this particular recipe is that you can skip all the complicated nuances of making Persian rice in a regular pot and go straight for the rice cooker to make your life a whole lot easier! There may be darker spots in the tahdig from the tomato paste, which are perfectly fine and quite delectable.
